Weekly Nutrition Tip

Just back from another Tuesday morning at the farm. Today's chores were all about washing and sorting the amazing greens, greens, and more greens. I also was able to help sort and fill everyone's CSA boxes. I'm not sure what Santa feels like when he is filling all of those stockings with goodies...but I'm pretty sure I had a small glimpse of it today.

I don't want to give too much away...but here is this weeks nutrition tip:

Chili Peppers: Chili peppers are a fantastic source of the anti-inflammatory compound capsaicin. The hotter the pepper the more capsaicin it contains. Studies reveal that capsaicin helps to reduce the pain associated with arthritis, psoriasis, and diabetic neuropathy. Topical creams made with capsaicin are proving to be very successful in helping to reduce arthritic symptoms in joints.

The nutrients in chili peppers work synergistically to reduce blood cholesterol, triglyceride levels, and platelets aggregation, which are associated with cardiovascular diseases. Cultures that use chili peppers often have lower cases of heart attacks, strokes, and pulmonary embolism. Use your chili peppers in homemade salsa, bean and rice dishes, and roasted sauces for grilling meat.

And those farm fresh eggs look lovely. I just had a fried egg, tomato and basil sandwich using local ingredients ... makes such a difference!

excellent post. I wonder if it helps decrease puffy eyes too...all around it sounds as if they are a wonder food.
