My column, The Alchemical Kitchen, for the Catalyst Magazine, is due today. August's column will be all about pickling, September's about canning, and November's about drying/dehydrating/storing.
But, instead of writing about pickling, I have spent the better part of this afternoon wandering around the new farmers' market at The Yard, buying more veggies, pickling them, and blogging about pickling. It could be seen as research, but if I'm being honest it's really procrastination -an opportunity for me to listen to 140 (!!!) new songs my dear friend Nala sent me. The sun is shinning, the music has been turned up, and I'm rotating between jars of dilly green beans and carrots in the hot water bath. My column may just have to wait until the wee hours of tomorrow morning.

Dilly Green Beans
Green Beans
Fresh Dill
Garlic Cloves, peeled
Kosher or Pickling Salt
Vinegar
Water
For each 1 quart jar: Pack green beans, standing tall with ends trimmed, tightly in jar. Add 1 full sprig of Dill, 2 cloves of garlic, and 1 tablespoon of salt. Fill jar with 1/2 water, 1/2 vinegar, leaving 1/4 inch of head space at the top of the jar. Place on two piece metal lids and tighten. Process in hot water bath or just a large pot of boiling water (both need to be at rolling boil for entire time) for 25 minutes.

I wanted to can spicy pickled green beans. I read about it in a magazine this week. They were served on top of bloody marys...yum

Pickled greens beans sound great! I've only pickled things a couple of times, but there are so many options of vegetables I'd like to try.
